I made this fabulous carrot cake for Simon’s first birthday. The recipe is from "King Arthur Flour Whole Grain Baking: Delicious Recipes Using Nutritious Whole Grains," which also has some of my favorite recipes, such as morning glory muffins. Stir in 3 ounces melted semi-sweet baking chocolate.&lt;br /&gt;&lt;br /&gt;Spray a cookie sheet with nonstick spray. Roll out one refrigerated pie crust. Spread chocolate almond mix evenly over the crust almost to the edge. Spread 2 tablespoons seedless red raspberry jam on top.&lt;br /&gt;&lt;br /&gt;Fold crust up over the filling. Sprinkle sliced almonds on top.&lt;br /&gt;&lt;br /&gt;Bake at 375 for 25-35 minutes. Sprinkle with confectioner’s sugar. You can also put whipped cream on top. You can use a round cake pan, or you can even use an 8 x 8-inch pan for a square dessert&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;SHORTBREAD CRUST:&lt;br /&gt;7 Tbsp unsalted butter, cut into pieces, room temperature&lt;br /&gt;1/4 cup sugar&lt;br /&gt;1 large egg yolk&lt;br /&gt;1-1/4 cups all-purpose flour&lt;br /&gt;&lt;br /&gt;CREAM CHEESE FILLING:&lt;br /&gt;8 oz cream cheese &lt;br /&gt;1 cup confectioners’ sugar&lt;br /&gt;&lt;br /&gt;TOPPING:&lt;br /&gt;Fresh fruit of choice&lt;br /&gt;(I used strawberries, blueberries, and banana)&lt;br /&gt;&lt;br /&gt;Method:&lt;br /&gt;FOR SHORTBREAD CRUST:&lt;br /&gt;In a bowl, combine the butter and sugar and blend to make a paste.  Add egg yolk and blend thoroughly.  Add flour and blend to make a crumbly dough, being careful not to overwork.  Pat firmly into 9-inch tart pan, cover with plastic wrap, and let rest in the refrigerator at least 2 hours or overnight.&lt;br /&gt;&lt;br /&gt;Remove from the refrigerator and price the bottom of the crust with the tines of a fork.  Place a sheet of parchment or foil in the pie tin and fill with pie weights, dried beans or rice and blind bake the crust in a preheated 400 degree oven for 10 minutes.  Remove the pie weights and foil and bake for another 5 minutes, or until light golden brown.  Let cool.&lt;br /&gt;&lt;br /&gt;FOR CREAM CHEESE FILLING:&lt;br /&gt;In a medium bowl, blend cream cheese and sugar.  Spread the shortbread crust with the cream cheese mixture and top with fruit, arranged in a decorative manner.&lt;br /&gt;&lt;br /&gt;This is so delicious and easy! Lightly butter a 9 inch pan tube pan. (I used a loaf pan.)&lt;br /&gt;&lt;br /&gt;Mix 2 TBS coffee with the water. Set aside. Mix flour, baking powder, baking soda, salt, butter, sugar, and eggs. Add coffee mixture in. Add sour cream. Mix well. In a separate bowl, mix brown sugar, nuts, cinnamon, and remaining coffee. Pour 3/4 of batter into pan. Sprinkle with half of nut mix. Add zucchini and fry for 2 minutes longer. Add everything else except salt and pepper, which come last. Oil baking sheet. Throw everything into food processor. Roll into 1 inch balls. Add the crushed noodles and slivered almonds to the skillet and saute, stirring occasionally (keep temperature at low/medium heat).  Meanwhile, whisk together all the dressing ingredients in a small bowl. Place the shredded broccoli into bowl and toss with the noodles, almonds, and sunflower seeds.  Pour dressing over salad and toss to coat. Salt boiling water and cook pasta to al dente.  Heads up:  Reserve a ladle of the hot cooking water just before you drain pasta.&lt;br /&gt;&lt;br /&gt;Place the frozen spinach on a plate and microwave to defrost it according to your microwave's directions.  Place defrosted spinach in a clean kitchen towel and wring out the liquid.&lt;br /&gt;&lt;br /&gt;Heat a deep skillet over medium-high heat.  Add 2 Tbsp extra-virgin olive oil.  Halve the zucchini lengthwise, then thinly slice into half moons and add to the pan along with the mushrooms.  Cook 2-3 minutes, then add onions and garlic to the pan.  Season the vegetables with salt and pepper.  When the onions are tender, about 5 minutes, add defrosted spinach, separating into small bits as you handle it, and the roasted red peppers and toss to heat through.  Transfer veggies to a dish and return skillet to stove top.  Add remaining 1 Tbsp of extra-virgin olive oil and the butter.  When the butter melts into extra-virgin olive oil, add 2 rounded Tbsp of flour and cook a minute or so, then whisk in stock and milk.  Bring to a bubble and thicken the sauce, reducing it 2-3 minutes  Season the sauce with salt, pepper and nutmeg.  Slide vegetables back into sauce.&lt;br /&gt;&lt;br /&gt;Place the part-skim ricotta in a large shallow bowl and combine with a ladle of boiling, starchy pasta cooking water.  Stir to combine, then add in a couple of handfuls of grated cheese.&lt;br /&gt;&lt;br /&gt;Drain pasta and toss with cheeses.  Add half the vegetables and sauce to pasta and toss to combine.  Tear or shred basil and toss into pasta.  Adjust seasonings. A nice combination of sweet and savory.&lt;br /&gt;&lt;br /&gt;4 jumbo sweet potatoes, peeled, chunked, and boiled&lt;br /&gt;(or substitute in other orange veggies)&lt;br /&gt;1 large egg&lt;br /&gt;3 cups grated cheddar&lt;br /&gt;1 teaspoon salt&lt;br /&gt;1/2 teaspoon pepper&lt;br /&gt;1/2 teaspoon cinnamon&lt;br /&gt;pinch nutmeg&lt;br /&gt;tiny pinch ground cloves&lt;br /&gt;2/3 cup melted butter&lt;br /&gt;2/3 cup all-purpose flour&lt;br /&gt;1 1/4 cup chopped walnuts&lt;br /&gt;3/4 cup packed brown sugar&lt;br /&gt;&lt;br /&gt;Mix everything, put in casserole dish. Add squash and next five ingredients to pan. Saute 5 minutes or until onion is tender. Add broth, peanut butter, tomato paste, and crushed red pepper, stirring well to combine. Bring to a boil. Pour egg-milk mixture on top and sprinkle with cheese. Then add milk/water a little at a time until you form a dough. Then grease a pie pan, flour your hands, and mash that pie crust into the pan and up the sides. Preheat oven to 375.&lt;br /&gt;&lt;br /&gt;QUICHE&lt;br /&gt;&lt;br /&gt;some grated or crumbled swiss cheese &lt;br /&gt;steamed, chopped asparagus&lt;br /&gt;sauted, chopped red pepper and onions&lt;br /&gt;3 eggs&lt;br /&gt;1 cup milk&lt;br /&gt;&lt;br /&gt;Line the bottom of the pie crust with the cheese. Dough will be sticky. Bring water to a boil in large pot. Pull of little blobs of dough and throw into boiling water (the recipe recommended pushing the dough through a colander into the boiling water, but that did NOT work...so stick to the dough plops). Once you've thrown all of the blobs of dough into the boiling water, cook for 2-3 minutes. Then serve however you like. Preheat oven to 375 degrees. Lightly oil 2 quart gratin dish...or an 8x8 baking dish. Boil sweet potato slices until tender.&lt;br /&gt;2. Toss tomatoes with artichoke hearts, olive oil, 1/2 teaspoon oregano, and 1/4 teaspoon salt in a bowl and set aside.&lt;br /&gt;3. Mix beans, stock, 1/2 teaspoon oregano, 1/4 teaspoon salt, and 1/4 teaspoon pepper in food processor.&lt;br /&gt;4. Start layering ingredients in dish: sweet potato slices-artichoke mix-bean mix. Repeat. Then finish with a layer of sweet potatoes on top.&lt;br /&gt;5. Brush potato slices with oil. Sprinkle with oregano, salt, and pepper. Cover with foil.&lt;br /&gt;6. Bake for 25 minutes. Then add everything else gradually and mix well. Put roasting pan in oven for 2 hours at 250 degrees. Stir ever 20 minutes or so. Allow to cool and add dried fruit if desired.&lt;br /&gt;&lt;br /&gt;If you want to make this into granola bars, it is super easy.&lt;br /&gt;&lt;br /&gt;Mix 1 egg, 1/2 cup peanut butter, and 2 tablespoons honey in a saucepan over medium heat. While they are boiling, saute butter and onion in a pan. Drain brussels sprouts and dump into butter-onion mixture. Squeeze in some lemon juice. Keep stirring over medium heat. In now-empty pot, pour in amaranth grains, put lid on, and turn heat to high. Cook for a few minutes until most of the grains are popped. Stir popped grains in with brussels sprouts mix. It is a very tasty recipe from a cookbook called "Whole Foods for the Whole Family." I got the cookbook for my birthday in September from my mom, but with all my being sick, I hadn't done much browsing in it for recipes until now. This hummus comes out pretty plain and would be good with a variety of additions...more garlic, toasted pine nuts, roasted red peppers. Mmm. Saute green pepper, yellow onion, and garlic with 2 Tablespoons vegetable oil in a small skillet over medium heat until lightly browned (approximately four minutes).  Set aside in a medium bowl.&lt;br /&gt;3.  In the same skillet, brown pine nuts and sesame seeds over medium heat, stirring occasionally (approximately three minutes).  Set aside in the same medium bowl.&lt;br /&gt;4.  Pour pasta and corn into large pasta serving bowl.  Mix in vegetable oil, Parmesan, and feta. Blanch edamame in boiling salted water for 3-4 minutes until tender-crunchy. Drain, refresh under cold running water, and drain thoroughly.&lt;br /&gt;2.Combine mustard, basil, vinegar, salt, pepper, and garlic in a blender; puree thoroughly. With the motor running, slowly add olive oil.&lt;br /&gt;3. Peel and cut avocados into roughly half-inch dice. Toss gently with lime juice in a large bowl. Add drained and cooled edamame, bell pepper, celery, onion, parsley, and cilantro. Pour dressing over bowl and toss gently.&lt;br /&gt;4. Divide salad greens among plates. Add butter. Add hot water to dry ingredients. Beat 2 minutes at medium speed. Add cottage cheese. egg, and 1/2 cup flour/ Beat at high speed 2 minutes. Stir in enough flour to make stiff batter. Let raise until doubled, about 1 1/4 hour. Stir down dough and put into 1 1/2 quart casserole dish. Cover and let rise until doubled, about 50 minutes. Melt 1 TBS butter in saucepan over medium heat. Add potato, onion, 1/4 tsp salt, 1/4 tsp pepper. Cover and cook 6 minutes. Add broth and 2 cups water, bring to boil. Cook 10 minutes or until potato is tender.&lt;br /&gt;2. Combine 3 TBS water and 1 TBS butter in large soup pot, bring to simmer. Add cabbage and thyme. Cover and cook 5 minutes, stirring occasionally. Remove from heat, add remaining 1/4 tsp salt and 1/4 tsp pepper.&lt;br /&gt;3. Place half of potato mixture in blender with center part of blender lid removed to allow steam to escape. Place a clean towel over opening in center of lid to avoid splatters. Blend until smooth. I love me some garlic.)&lt;br /&gt;2 4.9-ounce cans sweet green peas, drained (I used one larger can)&lt;br /&gt;1 teaspoon kosher salt&lt;br /&gt;&lt;br /&gt;Cut avocado in half. Remove and compost pit and peel. Combine avocado, lime juice, garlic, peas, and salt in food processor/blender. Or just mash together with a potato masher for a thicker-textured hummus. Roll dough into 1-inch balls. Coat balls in sugar and place on cookie sheet. Bake for 8 minutes at 350 degrees. Remove from oven and press one Hershey's kiss into the center of each ball. Prepare the rest of the ingredients and mix together well. Drain dried fruit and add to mixture. Scoop batter into a greased bread pan or lined muffin tins. Bake 25-28 minutes at 375 degrees. Saute onion and garlic in olive oil in large soup pot. Add vegetable broth, tomato juice, and remaining fruits/vegetables and bring to a boil. When everything is soft, process in a food processor or blender. Return to pot. Stir in curry powder. This soup is excellent with homemade croutons.&lt;br /&gt;&lt;br /&gt;*I have used tomato sauce, tomato juice, tomato paste, canned tomatoes...just whatever I have on hand. Beat egg whites with cream of tartar until soft peaks form. Gradually add sugar mixture to beaten whites, beating until stiff. Fold in crackers and walnuts. Pour into lightly buttered 9-inch pie plate. Bake at 300 degrees for 30 minutes. Cool.&lt;br /&gt;&lt;br /&gt;Topping:&lt;br /&gt;&lt;br /&gt;1 tablespoon sugar&lt;br /&gt;1/3 teaspoon instant coffee powder&lt;br /&gt;2/3 teaspoon cocoa powder&lt;br /&gt;1 cup heavy cream&lt;br /&gt;semi-sweet chocolate shavings&lt;br /&gt;&lt;br /&gt;Mix sugar with coffee and cocoa powders. Whip cream until soft peaks form. Gradually add sugar mixture until stiff. Use to top pie, and garnish with shaved chocolate.
